What happens when you eat too much sugar? According to Robert Lustig, the author of “The Hacking Of The American Mind,” the liver is the only organ that can metabolize sugar. Consuming too much of the sweet substance can cause your liver to build a resistance to insulin. That resistance is what drives heart disease, hypertension, and type II diabetes—issues that more than half of the US population deals with.
